Pretty much anything is gonna be fine. Some people like to stick to "tougher" classes. For example, "tank" classes which offer a "protection" specialization may be good for survival I haven't had huge issues one class or another. Singular is the combat routine used to execute spells and shit. You will see in this list each class, and under it, the specialization. I highly suggest choosing a specialization highlighted by these colors: Green - Supported. Tested. Optimal rotation. May not use some talents. Light Blue - Supported. Tested. Exceptional rotation. Full talent use. Dark Blue - Supported. Tested. Fully optimized rotation. Full talent use. Extra functionalities included. Basically, these were the builds/specializations that were optimized first. Additionally, these are the builds which will be the easiest to level. Artifact questline support will *likely* be better for a green or higher specialization. Basically, every time I create a character I refer to that link when it comes time to choose my artifact and specialization
If you need pure gathering character, then you have to consider just a few criteria for optimal gathering: 1. You would need tanking spec for best survival, unless the toon is heavy geared, then dps could be an option. 2. Mounting speed - DK and Paladin have critical spells, which gives unfair advantage in the farming - Crusader Aura/On a Pale Horse both gives +20% mounted speed. 3. Gathering speed - Depend on your faction, horde have the best option - female tauren for fast herb gathering, so you can use a Legion Mining enachant on gloves. 4. Using either Sky Golem mount or Druid's Travel form for gathering. Both are good options, but Sky Golem is still superior, especially with the 7.1.5's travel form bug, which makes it actually +80% instead of +100% speed, but once Patch 7.2 hits and flying is enabled in Legion, Druids will became equal alternative, most likely.
